If you click on a HH in the forum posted by someone else you can get 5 creates and they get 5 bonus creates so they can make 5 more :)

It may give you more or fewer creates depending on the rank of the Herd Helper. Lower ranks give more creates, usually of more common or less complicated colors. As you go up the ranks there are fewer creates and the horses have a more complicated or a more specific color.

Unless the herd helper specifically says that the horses will have a particular breeding or showing or consistency quality (like Perfect Foundations, Exceptional Producer, Great Show Horse, etc) all Herd Helpers are of random breeding and showing quality.
