Can you gmt roan off a horse?

Yes, unless it has it from both parents (if they were homozygous roan), then no. If it is a foundation, you can.

How can ypu gmt it off?

Assuming your horse meets all the GMT criteria (4 or under with no living offspring and either foundation or a lined horse where the parents have alternative genes to offer) then you select your horse to modify in the GMT lab and scroll down to the Kit section. If your horse is a foundation you can turn their Kitr into any other available kit allele assuming you can afford the change. If your horse is lined, you can only pick the other allele the parent has to offer but that change will only cost you 1 token, even if it is to KitM or W8.
Caveat: I do not know how changing Kit alleles will affect Kit Load and whether you might be able to end up with a lethal load but a living horse. Roan is a fairly safe gene as far as Kit Load goes...if your alternative allele is W1 or another of the high load alleles, you may end up with a majority white horse...
